In general use, herbs are any plants used for food, flavoring, medicine, or perfume. Culinary use typically distinguishes herbs from spices. Herbs refer to the leafy green parts of a plant (either fresh or dried), while a “spice” is a product from another part of the plant (usually dried), including seeds, berries,bark, roots and fruits.
Herbs can be perennials such as thyme or lavenderbiennials such as parsley, or annuals like basil. Perennial herbs can be shrubs such as rosemary,Rosmarinus officinalis, or trees such as bay laurelLaurus nobilis – this contrasts with botanical herbs, which by definition cannot be woody plants. Some plants are used as both herbs and spices, such as dill weed and dill seed or coriander leaves and seeds. Also, there are some herbs such as those in the mint family that are used for both culinary and medicinal purposes.

The leaves are much used in cookery for flavoring. They are often packed with dried figs. They are used fresh, and may be gathered all the year round.

Lavender is a lovely aromatic plant that can be purchased in dried form or grown in home gardens.
Health digestive herbs are often used to address issues such as nausea, intestinal gas and stomach upset and lavender is no exception.

Lavender was used in earlier days as a condiment and for flavoring dishes ‘to comfort the stomach.’

Applied on the body, it will act as a strong stimulant and may relieve various neuralgic pains, sprains, rheumatism, and even pain of a neuralgic toothache.
A few drops of the essence of Lavender in a hot footpath has a marked influence in relieving fatigue. Outwardly applied, it relieves toothache, neuralgia, sprains, and rheumatism. In hysteria, palsy and similar disorders of debility and lack of nerve power, Lavender will act as a powerful stimulant.
A distilled water made from Lavender has been used as a gargle and for hoarseness and loss of voice.
